Hi, welcome back to www.SimpleEats.com. I’m Vektween, your virtual host. First, both, Chef T and I, hope you’re all staying safe, washing your hand thoroughly and often, and wearing a mask when going out in order to help prevent the spread of the coronavirus. We will all get through this together.

As we all know, COVID-19 has disrupted our lives and completely changed the way that we live. This invisible-biological enemy has the world at a stand still, and we as a society are re-evaluating everything. We argue whether or not the lockdown was implemented into our society too late, whether or not we should re-open society sooner vs later, and maybe even who is to blame for not informing the world of COVID-19 sooner. Studies and research are saying we were late in our response to the coronavirus, and, as a result, so many more lives were put at risk because of this. We are slowly evolving in to a new way of living and already so much has changed. From social distancing, to wearing face masks and gloves when out, to not being able to gather with friends or family. So many people are working remotely, children are learning from home and families are now serving more home cooked meals than before.

COVID-19 – Brief Introduction

The virus Sars-CoV-2 is responsible for causing COVID-19 disease. It spreads from person to person, causing severe respiratory illness and possibly death. The older population and those with compromised immune systems are considered vulnerable. Anyone, no matter the age, with an underlining health issue can be affected. Within three months of the first confirmed case of COVID-19, in Wuhan, China, the disease had rapidly spread all across the globe causing a pandemic and complete societal lockdown. The race to create a vaccine is prevalent. There is a great possibility that COVID-19 could be seasonal.

The lockdown, social distancing, wearing a face mask, and washing your hands aims to help reduce the spread of infection. There has been a significant decrease in house spending, as consumers are reprioritizing their finances, and a variety of behavioral changes, as we all adjust to this new normal. All of these changes could potentially be for the long term, or at the very least, longer than we expect. Ironically though, COVID-19 has shifted our way of living into a more conscious and sustainable one. We are buying less, consuming less, driving less, and essentially having positive environmental impacts on the planet and it’s all over the world. We’re seeing sustainable development goals being tackled and the Earth is finally starting to recover.

Food Waste and its Issues

Aside from global warming and animal welfare, food waste has been a troublesome issue for quite some time now. Food and environmental sustainability is a global issue that needs to be addressed and rectified. There are roughly 1.3 billion tons of food lost or wasted every single year, and America makes up 680 million of this growing number. Separate from food power machinery or transport vehicles, food waste produces 3.3 billion tones of Co2 emissions. Low and middle-income countries have been dealing with an important issue for optimizing sustainability development. Would the COVID-19 lockdown change the behavior of consumers on how food waste is generally viewed? I sure hope so.
