If you’re getting a little bored of berries and baby spinach, you’ll be happy to know that fall vegetables are starting to come in. As we move into the new season you’ll discover a shift from lighter finds to heartier veggies like sweet potatoes and squash. Towards the end of fall, you’ll also see sturdy greens like Brussels sprouts and broccoli.
Now’s the time to start thinking about what you’ll pick up at the farmer’s market this fall—and, of course, what you’ll cook. Be bold and try something new. Below are my picks and recipe ideas.

From butternut and delicata to acorn and spaghetti, there are tons of easy dinners you can make with squash. Some of my favorites include:

I often use sweet potatoes instead of regular potatoes as a blood-sugar friendly alternative. Cooked sweet potatoes (and other root vegetables) can also help curb sugar cravings.
Try them mashed, pureed or roasted. Or, transform them into fries or potato skins on game days.
BEETS AND BEET GREENS
Beets are seasonal from July through October. In fall, I like to roast them with fresh or dried herbs. Then, I sauté the beet greens in olive or coconut oil and season them with salt. It’s a two-part side dish for the price of one!
This is one of many fall vegetables that flies under the radar. Next time you’re at the farmer’s market, pick up a bunch and give it a try. The key is to blanch the broccolini before sautéing it. This helps the stalks soften so they’re less chewy and stringy. Check out this simple recipe.
